BITD there really wasn't any weapons that could defend against a catapult. You could take shelter behind a wall and hope that it was strong enough to resist the projectile, that was about it. The only other thing would be to try to destroy the catapult, or kill those manning it. Crossbow, bows, well any projectile weapon could be used for that. The people trying to damage the catapult would have it more difficult though, since it'd be a lot smaller target.
