They put out their shoes. I think I remember reading that Dutch children put out wooden shoes with hay in them for the reindeer!
Some children in Europe place shoes outside of their door for Christmas rather than hanging stockings. Other children place gifts or even bouquets of flowers outside.

Before stockings, the French used leg coverings called garters or hose. Garters were bands worn around the leg to hold up socks or stockings, while hose were close-fitting garments covering the leg from foot to waist, usually worn by men. The evolution of fashion eventually led to the adoption of stockings as leg coverings in French attire.
France and Germany
They don't hang stockings in Spain. In fact, they leave out shoes instead. What for, I don't exactly know.
Christmas Stockings began in from the people who worshiped Odin. Children were to place shoes near the fireplace filled with carrots. Odin's horses would eat the carrots as her flew overhead. He would then put presents in the shoes as a gift of thanks.
We Dutch have our own Santa who comes end November. He places gifts in the children's shoes which they have put besides the radiator or fireplace. If we give each other gifts during Christmas we put them under the Christmas tree.
