Pancake day stems from the Catholic Holy Day - Ash Wednesday. Traditionally, the Tuesday before that is called "Shrove Tuesday".

Shrove Tuesday, also known as Pancake Day in Britain, is the day before Ash Wednesday and the start of Lent - 'Shrove' stems from old English word 'shrive', meaning 'confess all sins'. It is called Pancake Day because it is the day traditionally for eating pancakes as pancake recipes were a way to use up any stocks of milk, butter and eggs which were forbidden during the abstinence of Lent.

Traditionally, during Lent is a time to restrict on all kinds of foods (similar to Ramadan), but these days only the truly devout seem to still do so. Most now will only restrict on Ash Wednesday. For example, my mother is a moderate Catholic and she does not eat poultry on Ash Wednesday.
