Priest do essentially what other observant Catholics do. They celebrate one or more masses that would include the imposition of ashes. Also, they observe the laws of fasting and abstinence - that is only one full meal (and two smaller meals, no in between meal snacking) as well as abstaining from meat and meat products.

Otherwise, the priest would engage in normal pastoral work on Ash Wednesday that might include visiting the sick and homebound, appointments, etc.
