Most of the "vikings" during the viking age where not vikings at all. They were farmers. A viking is not a nationality, but rather a profession that was undertook most commonly by the 2nd sons of chieftains and kings to make a name for themselves, inviting along their friends and hired soldiers to fill up the ranks.
They wore helmets made out of leather or iron. The wore these cloths that were long and dirty looking. They carried a shield,axe,swords with them when they attack.

of course they did exercise, manual labour working the farm along with rowing oars on ships and weapons training, you actually have to be strong to wear mail armour so just having that is an exercise for the body. Vikings were part farmers and raiders/traders and some of them became mercenaries.
The monks weren't used to fighting, and the monasteries often had valuables like silver and gold.
