Vikings raised agricultural crops when they were at home, and these included vegetables and animals. Their land was not rich, and the climate was cold, so they used hardy grains, including oats, barley, and rye. They had root vegetables, such as turnips, beets and carrots, and they had cabbage crops. I have not seen references to their doing so, but I would be very surprised if they did not pickle vegetables. They raised sheep and small cattle, along with chickens for meat, eggs, and dairy products. Since they werer seagoing, they also ate a fair amount of fish. They made both ale and mead, and would have made cider in those areas where there were apples. They ate various fruit, including berries.
