The most important room was the main hall and the people who lived and worked ate according to seating in the medieval feudal structure. The lord and important family members were raised up at the front of the rooms and the lower members of family and friends were farther and farther away from the main table ( this is still seen today in weddings and receptions.) In the middle ages forks did not exist, but everyone used their own knife, spoon and square pewter trencher along with wooden bowls and a drinking vessel. Grace was said before every meal as part of the daily prayer ritual and servants washed more important people's hands before and after they ate. The first meal was breakfast after Mass. It usually was bread and wine. The main meal was served around 10 or 11 AM and was fresh game when available. It could be coney's, geese, pigeons, or a deer. There was no way preserve meat so it was always fresh. More wine and exotic spices were eaten with bread made locally. They also had some of the same fruits and vegetables we do today ( no potatoes or tomatoes). There was a smaller meal in the evening. Feasts were for special occasions and lasted up to 4 hours with 5 courses. The main course would include salted beef, fresh fish, many kinds of birds and fowl along with a tough and chewy pork. Salt was the favorite spice and was kept at the head table. The lord dank milk, wine, and mead. Water was boiled before drinking, but most drank wine.
