On the trail some of the more common foods cowboys ate are: beans, jerky (beef, elk, deer, etc.), and pork (salted and corned). Cowboys worked long hours over long distances often in desolate terrain. Thier food had to be easily portable, easy to cook, chock full of protein and other nutrients, cheap, and not easily spoiled. Only a few food items of that time period qualified in all of these categories, some of which are listed above. Sometimes, cowboys could supplement their diet with fresh meat from hunting, but many factors (including inaccurate firearms, the fact that large herds of cows moving through a terrain would scare off other animals, etc.) meant that hunting could not be relied upon to feed the crew. The desolate terrain meant that often wild fruits and vegetables could not be relied upon either. So they mostly ate beans. A lot of pork and a lot of beans.
In town, of course, a cowboy could visit the local saloon and have access to all the same foods the locals did.
