The records we have of the early rabbis are mostly in the Talmud. This indicates that essentially all of the early rabbis had day jobs. Priests in the Temple in Jerusalem were profited by the system of tithes and offerings, but outside of the Temple, there were no clergy jobs that paid a living wage. Scribes could make money by writing divorce and marriage contracts, which even then were governed by Jewish religious law, by writing inserts for tefillin and mezuzot, and by writing copies of holy texts on commission, perhaps augmented by jobs writing commercial contracts and keeping commercial records. (Tefillin and mezuzot are both cases holding small parchment scrolls with biblical text on them. Tefillin are worn on the arm and forehead, meuzot are attached to the doorposts of houses. We have archaeological and literary evidence that the practice then was not very different from the practice among observant Jews today.)
