Food would be eaten in the Great Hall, which might be inside the donjon (later incorrectly called a "keep"), or in a separate smaller building; the kitchens might be some distance away from either of these so people had to get used to eating food that was barely warm. In a small castle the kitchen is often within the donjon, while at larger sites the kitchen is itself a separate building to reduce the risk of fire being spread on to other parts of the castle.

The kitchen would be a large room with bread ovens, a large fireplace (or two) and perhaps a sink all built into the thick stone walls. There was often a cesspit entrance near the fireplace where kitchen waste (and human excrement) would be deposited. This cesspit could only be emptied in buckets via the kitchen, an extremely unhygienic arrangement.

The kitchen would be overseen by the butler (the official in charge of all catering and wine storage), with a cook and a staff of kitchen servants to prepare food. Inside the kitchen would be large oak tables, shelves and hooks for storing and hanging utensils; the oven would include one or more spits for roasting meat over an open fire. At least one hearth provided heat for cauldrons.

An account of the staff of the kitchen of king Henry I includes a "turnspit" whose only task was to sit near the fire turning meat on a spit, for which he was paid one and a half pennies per day.
