Muslims have studied numerous books throughout history from religious literature to philosophy to histories to math and science treatises. Baghdad was famous under the Abbassids for the vast libraries and universities where the most learned of the World (save for China) would study.

If the question refers exclusively to Islamic Holy Literature, there are innumerable such books as well. The most famous are the Qur'an (the Divine Revelation), Sahih Al-Bukhari and Sahih Al-Muslim, et al. (Hadith collections), and the Biography of the Prophet Mohammed by Ibn Ishaq.
