They ate whatever they could find in the wild. As their knowledge grew, so did their diet. Berries and herbs/plants were a part of their diet. But mammals they could catch were part of their diet. Also although their job mainly kept them in the mountains, they ate buffalo when opportunity arose. (This was not often, as they didn't tend to venture onto the plains preferring the mountains as they were better/ more plentiful trapping areas).

Trappers and mountain men were instrumental in exploring and settling the land west of the Mississippi. They had survival skills, and taught them to the new inhabitants of the Wild West.
Supposally in the movie wrong turn,the mountain men of west Virginia are cannibalistic disfigured men that go around the mountains catching people so they can eat. The father of these men would lead travelers who ask for directions,to an area where the mountain men would expect to find their live food to eventually kill them and eat them. Of course its not for certain that this is fact but so far it's what's heard.
