They meet and Romeo romances her by telling her that he is a pilgrim, and she is a saint that she can take his sins away with a kiss, and then he kisses her. They find out their identities later on that day.

Very little, actually. They aren't together that often and when they are they have other things on their minds apart from making plans. In the balcony scene Juliet makes a plan for Romeo to send word whether he wants to marry her or not the next day, and Romeo goes along with it. Romeo makes the wedding plans all on his own. Even when they are having their wedding night they do not think about making a plan to get Juliet out of Verona and into Mantua.

Their failure to try to take charge of their future together must be one cause of the trouble they get themselves into.
