Except in free electron LASERS they have every thing to do with generating LASER light. A lamp is used to excite the valence electrons of the mediums atoms to higher orbits. When a population inversion occurs the light coming out of the medium is of the same frequency and stays in a beam not diverging as incoherent light would.

Atoms, of course, have to do with everything, since everything is made of atoms.
