If they are raised in clean water they should be edible. I have not had the chance to eat marbled crayfish yet, but am thinking of adding them to my aquaponics system in my greenhouse, and plan to try eating them also. I have eaten a lot of local crayfish that are no bigger than the marbled crayfish.I sure hope they taste good. I plan to eat some.
