Depends on what they're landing on. If they land on what they see as food, they secrete a solution from their mouth that helps break down their 'food'. if they find a dead body, they do what I just said or they will lay eggs if they're female.

First, if the fly runs out of food, it dies. It can only fly for particular period of time before it dies. So it will stop and take breaks. It will fly looking for food. It will fly looking for a good place for a female to lay her eggs. With some flies, if a male fly finds a place where fly larva will have food he will stay there and wait for a female to arrive. They will get together and she will lay her eggs. With other flies the females simply land and wait for a male to find them.
