Many people eat jelly filled doughnuts, called sufganiot, during Chanukah. The reason for this is that they are fried in oil, and the miracle of Chanukah is related to oil. When the Jews took back the Bais Hamikdash (tabernakle), only one jug of oil with the seal of the Kohen Gadol (High Priest) was found. This oil was used to light the Menorah, and had to be fine, pure oil. One jug of oil, which normally lasts for only one day, lasted for eight days until they could get more oil.

Any foods fried in oil are traditional, such as jelly donuts or potato pancakes. This is symbolic of the oil used in the menorah of the Ancient Temple.

We eat fried foods since they're reminiscent of the oil in the menorah of the Temple, for which the miracle of Hanukkah took place.
