They wouldn't normally. In the wild, they would eat almost any animal that was the right size for them - this could be anything from a small dog to a large deer (depending on the size of the snake). With captive reptiles, rabbits are (a) easy to acquire and (b) hygienically bred specifically for the reptile business. They are humanely killed, before being frozen. The reptile-keeper simply has to thaw the rabbit(s) out overnight ready for feeding.
