You may be one of the people who are considered as supertasters/ people who experience taste with greater intensity. There are certain cases where people have a sensitive TAS2R38 receptor gene, or the bitter taste receptor, but this only makes makes you taste bitter substances more distinctly, which is good at times because bitter substances are mostly toxic. Btw, water tastes bitter and metallic to me too. I can't drink a mouthful without gagging.
