This word can refer to an individual, or to an entire community where more than two language are spoken. (A person who speaks two languages is "bilingual.")
A person that can speak two languages is bilingual, a person that can speak three languages is trilingual. So if we were to extrapolate this with Latin, the Latin root for all, is omni so then someone who knows all the languages, both on Earth, in humans and other species, on computers, in nature and on other planets. That very rare type of person would likely be described as omnilingual. Of course, if they just speak a whole bunch of languages and aren't gods of language, you might use the word polylingual as well - both are the results of tying together Latin roots though and likely won't show up in spell check.
