Your second cousin's daughter is your second cousin, once removed.
Your third cousin's daughter is your third cousin, once removed.
The daughter of your first cousin, once removed, is either you second cousin or your first cousin twice removed.
The daughter of your second cousin, once removed, is either your third cousin or your second cousin twice removed.
And it gets more complicated from there.
my first cousin's daughter = la fille de mon cousin/ (ma cousine) germain.
.... i.e If your cousin is a girl = la fille de ma cousine germain

Second cousins
Any children of your parents' siblings are your cousins.
There is no such thing as great-cousin. There are 1st, 2nd, 3rd, etc cousins and "removed" cousins. The son or daughter of a cousin is your cousin "removed". Example: Your first cousin's children are your first cousins once removed.
Your niece and your daughter are first cousins. Your niece's daughter and your daughter are first cousins, once removed.
A cousin, in all those difficult cases they are your cousins
