It is called a crown or canopy. Crown is the proper term, canopy usually refers to a space where the crowns of many tall trees join together to form a roof however it is also used informally to refer to the top of any tree.

The canopy, as in the rain forests. The canopy there is actually considered a habitat of its own, a ecosystem, where there are animals that live only there and where one animal depends on another and one animal or insect lost could begin a domino effect of ill health like in other ecosystems.
