Generally in Hunter Under Saddle (US) you will walk, trot, and canter on the rail with a group of horses. You will also have to demonstrate a halt and back up 4 or 5 steps. You may be asked to perform a pattern, but that is unusual.
What a judge looks for in Hunter US is that the horse is "long and low". This means that their head should not be rounded or curled up, but long and low. This class is also judged on the horse, generally, so having a quiet, consistent and even stride will win the class.
Show hunter is a separate class to working or open hunter. Show hunter is ridden on the flat, no jumps. You all enter the class, walk, trott and canter around as the judge commands, the judge/ steward will then ask you to line up. You then do an individual show which consists of trott and figure of eight, then canter a figure of eight and once you have cantered your figure of 8 you do either and extended canter down the longside of the arena or a gallop. Often whilst in your line up you will have to take off the saddle and do a quick in hand walk and trott with a different judge. Sometimes the judge rides your horse and sometimes they don't. Work/open hunter is excatley the same execpt before you do the show you jump a course of rustic fences.
