Are you trying to skin the pelt or make the coon for supper? (many people love to eat coon!)
Pelting a coon is done with a flesing knife and a fleshing board- they usuallly are very fatty and the fat must be removed.
to eat a coon you also want to remove the fat- many like them with BBQ sauce!

You want a sheering type knife for manueverability when skinning salmon.
Mohair is from clipping an Angora goat, not skinning it. Skinning it is completely removing the hide AND the hair, and is only done when the animal is dead. Clipping is done when the animal is alive and is only done to remove the hair. Clipping is much less painful than skinning.
The good that comes from skinning animals is that the animals that have been skinned have no skin anymore! :)
The main tools used when skinning horses for their hides are sharp knives. Skinning is only done after a horse has been stunned with a cap-bolt gun and bled out completely.
