Abalone has a very mild flavour most analagous to squid. It performs similarly to squid going hard and rubbery if overcooked. I think it is a good base for other flavours such as garlic, tomato sauces, and olive oil etc.

Scallops taste a lot like sea bass. In my opinion, they r very good. Most of them are thickly cut, with makes the not as good.Try to get the thin cut ones.
