To my knowledge, none in English. But at some points they do say it in Italian.

ezio does not die because they say his name in the end. But they do mention that he comes back to the assassins shrine when hes much older. yes he does go back to the shrine but dies when in his 80s or 90s with his kids and his wife sofia that you will see in assassins creed Revelations.
Assassins Creed's have similar quests but are different to how you play them. Some people may find these quests easier on 1 game but other people may say the other. Its a personal option so it can not be answered,
