If you're referring to the opening voiceover from the original series, he says:
Space... the final frontier. These are the voyages of the Starship Enterprise. Her five-year mission: to explore strange new worlds; to seek out new life and new civilizations; to boldly go where no man has gone before."
It got modified slightly in the movies so that it occasionally now refers to "her continuing mission" and usually ends with "no one" rather than "no man."
