The crescent probably signifies the lunar calendar, which we Muslims use. The star I have no idea, nor do I care.
It does not matter what the star and crescent stands for because it is not a true symbol for Islam. It was something invented long after Muhammad. Since Islam is only what Muhammad brought, it does not count at all. If there is any true symbol, or mark, of Islam, it would be the words written on the flag of Saudi Araba (but not the sword):
Laa Ilaaha Illa Allah, Muhammad Rasool Allah.
There is no god but the One God, Muhammad is the Messenger of God.
That symbol - the star and crescent - is not a valid symbol for the religion. It was invented, some centuries after Muhammad.
In fact, if there is any symbol that could be used, it would be the written words: Laa Ilaha Illaa Allah, Muhammad Rasool Allah (there is no god but the One God, Muhammad is the Messenger of God).
I suppose the crescent moon is because Muslims use the lunar calendar.

Islam considers Shirk (or worshipping anyone or anything rather than God or with God or set up partners or associates with God) is an unforgivable major sin that God never forgives the that person is thrown in Hell forever. Islam wants peace, security, knowledge, co-operation between all peoples, harmony, dignity, wisdom, and so so much good things and qualities.
