Cakes without wheat flour tend to be fairly flat.. Much of the structure of a normal cake is due to the gluten in flour and such things as ground almonds which are sometimes used as an alternative are lacking in this.
Yes, but be ware. Cake flour is formulated specifically for the features most people would look for in a cake. Their mixtures make the cake lighter a fluffy and usually hold moisture better so the final product is a dense dry wad of bread. All purpose flour is just that. It is pretty much the middle of the road. The gluten content makes the final product tougher and chewier. Cake flour contains less of it. So it turns out more spounge like in the fact that you can press on it and it bounces back slowly. More gluten and you are to bread crust. Hope that helps! Happy cooking. Oh and mail me a slice for analysis ;)

No, cornflour would not be a good substitute for wheat flour in cakes. The cornflour would produce a very different taste and texture than the whet flour, and the resulting cake probably would not look or taste as it should.
I like to look at the flowers in th garden whilst baking with good quality flour.
I always think it looks like wholewheat flour, and make sure all my flours are well labelled.

No, because the fruit does not have flour, eggs and the things you need to make a cake although you could make a fruit "tower" by putting fruit on top of each other and that would look cool, sorry.
it will pretty much look like a regular cake, except! it will be hard and chewy! so if you are expecting to bite into a nice soft fluffy sponge cake that will not happed, most likely the middle of the cake will drop, but when the cake cools it will be heavy in weight and very grainy and rubbery!
