It is hard to define the taste of a cucumber. A cucumber is mainly very watery and juicy and the seeds give it a hint of freshness. They have a bitter, slightly watery taste.

A friend teaching English in Korea told his colleagues he was adventerous with food, so they ordered it in a restaurant, it was still moving on the plate that came to the table. Don't know what happened after that (I don't think he ate it) but sea cucumbers have a lot of meat on their bodies and few hard parts so probably it's a bit like molluscs (muscles, scallops etc) but since some contain medicinal ingredients the taste probably varies.

I ate some while on a kayaking trip once. It has a sort of weird rubbery pineapple taste.
