Folklore says it means that bad weather is coming mild winter last year. However, in reality it does not mean anything. Caterpillars cannot predict the weather.

No ermines do not hibernate in the winter. Why have a white fur coat in the winter if you are just going to sleep through the winter. Take the grizzly bear for example it has a brown coat and it hibernates but the ermine has a white coat so it does not hibernate in the winter.

It can be a Monarch caterpillar or a Northern Florida caterpillar.

That sounds like a cinnabar moth caterpillar. They are toxic and can deliver quite a sting and are quite aggressive towards each other.

In the Northern Hemisphere, you can tell from space that it's winter by observing the snow cover. Or... you know its winter when the days are shorter, weather is colder, and yes.... white all over the place.
