No, a plane flying against a jet stream will travel slower than a plane traveling with a jet stream. The jet stream is a high-altitude wind that can either boost or hinder an aircraft's speed depending on the direction of travel in relation to it. Flying with the jet stream provides a tailwind, increasing the aircraft's ground speed, while flying against it results in a headwind, reducing the ground speed.
While on their journey to Elsewhere, there would be multiple times in which a plane would go past flying above them. This is where Gabriel would point to it and say 'plane! plane!' But when they go further into their journey, they, for the first time, see wildlife. And when they saw a bird flying, Gabriel thought it was a plane, and so he shouted 'plane!' when it was really a bird.
I think so other people can get to sleep without the blinking lights from outside the plane annoying them. But there may be other reasons.
