Cheese is a very hard thing to explain. It's more of a try it - then you'll know kind of thing.
Basically though, it tastes salty, smooth, kinda tangy, but it's really good :) I suggest you try it yourself.
IN ADDITION:Many different things influence the taste of cheese. There are cheeses that barely have a flavor at all and others that that may not get past your nose as they are very pungent. There are mild, medium, sharp and extra sharp grades of cheddar. There are blends of Colby and Monteray Jack cheese called Co-jack which is a popular choice for resturants to put on nachos and potatoes and even burgers. There are cheeses that are moist like Ricotta and dry like Feta. There is goat cheese which will be distinctively different and many strong cheeses like Muenster.
Trying to describe a taste to someone is like trying to describe the 16000 different shades of green to a blind man. You will have to experience it for yourself to have a valid opinion.
There are a number of variations on the classic Monterey Jack cheese. When aged or dry it resembles Cheddar, but when soft and un-aged it is similar to Muenster in flavor. Some producers add herbs or hot peppers to make herbed Jack or pepper Jack cheeses. Monterey Jack is also sometimes blended with Colby, another mild American cheese, to make Colby Jack. One of the most coveted varieties of Monterey Jack is dry Jack, an aged version of the cheese which can be difficult to find outside of California. Dry Jack acquires a much more complex, sharp flavor and it turns hard enough to be grated and used like Parmesan.
When seeking out Monterey Jack cheese, look for a smooth, evenly colored specimen without signs of cracking or discoloration. The young cheese is somewhat perishable, so it should be used quickly. Dry Jack is more shelf stable, when it can be found.
One of Spains most famous cheeses. Made from Goats milk and herbs found only in LaMancha of central Spain.
Available in two varieties, Manchego CURADO is aged for two to four months and is semi-soft. The more intense flavor of Manchego VEIJO is aged for as long as one year and has the texture of Italian Parmesan but a distinctly different flavor
It tastes like Pirate's Treasure. It is smoothe and creamy, sweet and sometimes salty. I asssure you that its amazing a very fluffy. But its hard to explain. you must taste it for yourself.
Once it is properly aged, manchego develops a nutty caramel flavor.
Depends where it comes from and who makes it. I find American Mozza quite bland. Where I live in Canada we can also get Italian Mozzarella and it has a totally richer taste.
