Convection is the tendency of heated air or water to rise, because the molecules have more energy and take up more space -- the less dense air or water is displaced by cooler, denser fluid. Convection typically forms a cycle where fluid is heated then cooled. On the Sun, huge convection cells carry heated plasma from the interior to the outer surface or photosphere.

Convection cooking means bringing airflow into the oven. This form of cooking is faster and more efficient than a regular oven. Convection ovens have special fans and one more element installed. Another great thing about convection ovens is that they have three elements instead of two like a regular oven, so everything cooks much more evenly.

Convection means to bombard from all sides. The well known convection oven is a good example as it not only heats from the bottom (like a stove), but from all sides.
