When you heat a protein it vibrates rapidly. The hydrogen bonds that hold the amino acid strand together (giving the chain its folded or helix shape) break and the protein unravels. Once unraveled, the chains then link back together, forming new bonds in a different patten. This changes the construction of the substance and therefore changes the behavior. The best example of this is to heat an egg. It changes the proteins, making stronger, permanent bonds, and causing the egg to change from clear to white and Gelatin to solid.

Certain proteins can physically deform during temperature changes, causing them to becoming denatured. This means they will not react correctly with other substances, because the molecule won't be "lined up right" when it collides with another reactant (at the particle level.) This is why your body runs a fever when you get sick. It's trying to kill the invading chemicals by denaturing them, so they can't replicate.

When proteins are heated, their chemical structure is denatured (changed) and it cannot be reversed. Becomes less soluble and if overheated, its less digestible.

The right amount of heat will generally denature proteins which is essentially when they unravel. This generally makes them useless/ineffective
