It is natural for the people or things one thinks of a lot to appear in one's dreams. There is no deep significance to dreaming about one's girlfriend. It simply means she has been on one's mind.
I'm no expert on dreams, but I'll try.
Dreams are made up of what is on your mind. These things can easily be subconscious, so dreaming about something could mean your brain is thinking about it, whether it be in the conscious or subconscious part of your brain.
In general, I believe that anything that you dream is based on something in your brain. Try keeping a "dream journal," or every time you remember a dream, see if you can associate it with something in your life.
