A big change in the number of dreams could be caused by many different factors, including various medications (prescription or OTC), alcohol, caffeinated drinks, or stress. One might also merely remember more dreams than usual, due to being awakened several times during the night.

Yes, having a lot on your mind could interfere with normal sleep. Other possible causes might include energy drinks, alcohol just before bedtime, or disturbances nearby that interrupt sleep. Waking frequently during the night would mean waking during or after more dreams, which would then be remembered. When one sleeps through the night, such dreams would naturally be forgotten.
