Cheese is a very hard thing to explain. It's more of a try it - then you'll know kind of thing.

Basically though, it tastes salty, smooth, kinda tangy, but it's really good :) I suggest you try it yourself.

Many different things influence the taste of cheese. There are cheeses that barely have a flavor at all and others that that may not get past your nose as they are very pungent. There are mild, medium, sharp and extra sharp grades of cheddar. There are blends of Colby and Monteray Jack cheese called Co-jack which is a popular choice for resturants to put on nachos and potatoes and even burgers. There are cheeses that are moist like Ricotta and dry like Feta. There is goat cheese which will be distinctively different and many strong cheeses like Muenster.

Trying to describe a taste to someone is like trying to describe the 16000 different shades of green to a blind man. You will have to experience it for yourself to have a valid opinion.
