He doesn't. Because Shakespeare, as you seem to have forgotten, was writing a play, he doesn't describe events taking place on stage with imagery. He gives a stage direction: "She stabs herself and falls" (1597 Quarto), "Kills herself" (Folio), or nothing at all (1599 Quarto)

Juliet, in her line "Oh, happy dagger, this is thy sheath" is using a metaphor, comparing stabbing oneself to sheathing a dagger, but she is not describing her death, just stating her intention.
