The flower is variously a symbol of birth, rebirth, childhood, and virginity. The bloody flower would be a symbol of the loss of these things.

According to an interview on "Unscripted" with Author Stephenie Meyer the tulip on the cover of New Moon had no meaning for her and the book. It was simply a design decision made by the publishing company.
