I don't know about the skin... I believe it will, but you'll have a devil of a time making them keep without the sheer amount of salt dehydrating you poor pooch. If you do make treats for your dog using the skin of ham hock with the huge amount of salt if you want it to keep for more than a week, have him/her drink lots of water.

Depending on the age and the spiciness. You don't want to give an 8 year old dog a large amount of any human meat. I would stick to dog food and the occaisonal scrap of neautral flavors. Not too spicy, not too sweet. Nothong raw, no fish.
