There were few sports played in the middle ages. The nobility hunted for sport, used falcons for sport, gambled, and had horse races. There were archery contests, ax throwing, and caber tossing as well as wrestling. Henry VIII did introduce tennis and hand ball ( but he was after the middle ages).

These sports were played rather informally, compared to the way sports are played today. The idea of standardized rules came long after the Middle Ages ended.

Sometimes there were sides, such as one village against another. Sometimes there were no sides, and it was each person for himself.

Sometimes there were rules agreed to in advance, and sometimes it seems there were next to no rules at all. A form of medieval football, called mob football, does not even have a restriction on the number of people on each side.

Tournament games were advertised in advance, with invitations going out to people who were considered important to have in attendance. Other games were pretty much spontaneously begun.
