Unfortunately, I don't think anyone can answer that for your rifle, but only for the rifles they were shooting.

Due to the manufacturing proccess, every rifle is more or less unique, even if they are the same model. What shoots super tight groups in my rifle might not be as enjoyed by yours. They are very much individuals.

The upside is, the best way to answer this question is to grab a selection of ammo and go shooting!

What is a Winchester model 70 30-06 manufactured in 1957 that has never been fired in new condition worth?

The collector value can only be assessed by a visual inspection & evaluation. Old Winchesters are very much like old classic automobiles... the graded condition and factory originality are the key factors in determining what they are truly worth. As a side note, all Winchester firearms have been fired a minimum of 6 - 10 shots as the factory test fired all rifles for proof testing, and coarse setting of the sights. Bert H.
