That is correct, dehydration is a process. When you pick a ripe mango off the tree, that is an unprocessed food, which you can eat exactly as it is (or if you like, peel the skin off first - it's still unprocessed). When you dry the mango out, you are processing it. It is a relatively simple process, as food processing goes, but it is still a process. Anything you do to a food that changes it from the state it is found in nature is processing. A food can be processed, but still be healthy. It just depends on what the food is, and how it is processed. A dehydrated mango will be much less processed (and healthier) than something like mango syrup. The syrup would be a much larger change from the mango's natural state.
