How do bacteria cause an illness as food poisoning?

Food pisoning is most often caused by toxic substances that bacteria found in food produce. The bacteria have grown and multiplied in the food, most often if the food is stored at a certain temperature that must not be too low or too high. The toxins are sometimes produced when the bacteria grow and multiply in the food before eating it. Other times the bacteria produce the toxins when they grow and multiply further inside the stomach and intestines after the food has been eaten.

What is the cause of food poisoning?

Bacteria. Specifically: Staphylococcus aureus, Clostridium perfringens, and Clostridium botulinum. Also a group of bacteria called Salmonella. When food is contaminated with any of these organisms and allowed to grow at room temperature they produce toxins. The exception is botulism. It usually surfaces in improperly canned foods. It grows and produces toxins anerobically. Cleanliness in food handling, thorough cooking of meats, keeping foods either hot or cold so bacteria won't grow, and following approved recipes for home canning, will help prevent food poisoning.
