There is no difference between kosher laws as applied in one area as opposed to those applied in a different area. Therefore, Jews who keep kosher in Palestine avoid the same animals, require the same methods of slaughter, abstain from mixing dairy and meat/animal products; and, during Passover, eat only unleavened breads (matzoh). There are also Jews in Palestine who do not keep kosher and, therefore, eat whatever they want.
Regarding fruits, vegetables, legumes and grains, there are differences between Israel, Palestine, and the rest of the world. The Torah-laws of Orlah (Leviticus ch.19) and tithes, apply only in Israel/Palestine.
