Evaporation
For a molecule of water to change from a liquid to a gas requires it absorb heat, called the heat of vaporization. Evaporation is the conversion from a liquid (water) to a gas (water vapor), so each molecule that evaporates takes the heat of vaporization with it making the remaining water cooler.
