Formula 1 cars do not defy gravity; they are actually designed to aid its effect by the use of aerodynamics to push the car harder onto the surface. You may be referring to the fact that it is possible for a Formula 1 to drive on the roof of a tunnel, such is the force created by the wings at high speed.

G forces are most prevelant. The downforce on the car is generated by wings usually. the unsprung weight is outside of the springs(obviously), the sprung weight is better for cornering ability of the car.

Why are there two formula 1 drivers per car?

Formula 1 cars are built for only one driver per car. You must have formula 1 confused with other types of car racing where there are two people on the front-side of the car where one drives while the other navigates. F1 cars have a single person cockpit which can accommodate only one person.
