Nitrogen isn't incorporated via breathing, all the nitrogen we have in our bodies are atoms that we ingested, that were fixated by other organisms such as plants. It's part of our DNA molecule, and a lot of other necessary molecules for life.

Oxygen, besides being a constituent of many of our organic molecules, besides being part of the inorganic water molecule, is used in energy releasing metabolistic processes.
