Finger style guitar just means that you won't be using any sort of plectrum to play. Depending on the difficulty of the arrangement decides the difference in tuning. Alternate tunings not only sound "cool" when strummed open, but they serve a purpose. Certain hand positioning wouldn't be possible in standard tuning.

There is no "best" tuning for fingerstyle. It can be played in standard (EADGBE) as well as many others.

One of the most popular tunings is DADGAD. It is used traditionally in celtic-style songs but can be adapted to really cool fingerstyle music.

Dropped-D tuning DADGBE works well for alternating-bass type songs.

Open G-Major, or any open chord tuning for that matter, is great to use because when strumming the strings open it makes the sound of a common chord. G Major is DGDGBD.
